Ingredients

    *Yukon Gold Potatoes - 1 potatoe, 2 serving (remove)
    Carrots, raw, 2 large (7-1/4" to 8-1/2" long) (remove)
    Cauliflower, raw, 1 head, medium (5-6" dia) (remove)
    *Raw White Onion (Serving = 1 medium Onion), 1 serving (remove)
    Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips, 1 serving (remove)
    Olive Oil, 1 1tsp (remove)
    Red Ripe Tomatoes, 2 cup cherry tomatoes (remove)

Directions

Boil all the vegetables except for the pepper and onions. Sautee onions and stewed or boiled tomatoes (remove skin). Cook until onion is translucent and the water from tomatoes leaves the sides of the pan. Stir in 2 tsp Indian pav bhaji masala (available at grocery store). Cook on medium heat for 3-5 minutes until aromas are released. Then throw in rest of the boiiled vegetables. mix well and mash the vegetables. reduce to low heat with a little bit of water added to the vegetables. Cover and cook for another 15min. serve immediately with whole wheat tortillas or bread (nutrition does not include bread or tortillas)
