Introduction

Got this out of Vegetarian Times. If you are a strict vegetarian, like me, you'll want to double-check the goat cheese and make sure it is made with vegetal rennet. Ingredients

    1 lb asparagus, trimmed and cut into 1-inch lengths, tips reserved for garnish, optional

    1 ts. olive oil

    2 large shallots

    2 cloves garlic, peeled

    4-5 oz fresh goat cheese

    2 large eggs

    5 large egg whites

Directions

1. Coat 4 ramekins or a 9-inch-square banking ban with cooking spray. Toss asparagus in oil in a bowl, and season with salt and peper, if desired. Place ramekins in oven, and preheat oven to 425 F. (This is an important step - vessel MUST be preheated!)

2. Meanwhile, place shallots and garlic in food processor and process until finely minched. Add goat cheese, and process until creamy; then add eggs/egg whites and puree until smooth. Season with salt/pepper, if desired.

3. Once oven/ramekins have been preheated, remove from oven and put the asparagus in. Then add egg mixture over the asparagus, stirring to evenly distribute. Bake 15 minutes or until top is light brown and tester (wooden toothpick or skewer) inserted in center comes out clean.
