Introduction

Number of Servings: 6

Ingredients

    1 cup cornmeal (not quick cooking)
    4 cups water
    1/4 cup parmesan-romano cheese
    1 tbsp olive oil
    1 tsp salt - more if desired.

Directions

Preheat oven to 350F.
Add all ingredients to oven safe dish and stir. Place dish in oven and bake approximately 1 hr. Stir for 1 minute. Bake up to an additional 20 minutes, checking often until polenta is thick and creamy. (The best way to tell if the dish is done is to taste test - if it tastes good to you, it's done!)

Leftovers should be spread on a pan to cool. Store covered in the refrigerator for up to one week. Leftover polenta can be cut up and broiled, baked and fried, served in place of pasta or bread in meals.

Recipe can be made ahead of time, is gluten free and is insanely delicious. Enjoy!
