Ingredients

1 cucumber, peeled and thinly sliced
2 Tbs malt or cider vinegar
1/2 tsp salt
Thinly sliced bread
European Style Butter
Or Land o Lakes Ultra Butter
Directions
For a nicer presentation and for the best results, score cucumber lengthwise with fork and slice as thin as you can and use thinly sliced white bread with a firm texture. Toss the sliced cucumber with vinegar and salt and let them sit in a strainer at room temperature for around thirty minutes. Rinse with fresh water if they're too salty and pat dry with paper towels to get rid of any excess water.
Spread with a high-fat "European-style" butter on one side of two pieces of bread. Place two layers of cucumber slices on one of the slices of bread and top with the other slice of bread. Trim off the crusts and cut diagonally into four triangles. Or with a cookie cutter, you can cut bread into any shape you want and then fill them.
Can be made ahead and refrigerated ovr night. Arrange the sandwiches on a cookie sheet, cover with lightly damp paper towels and then cover the whole sheet with aluminum foil. No proper afternoon tea would be complete without a small assortment of tea sandwiches. Arrange a selection of sandwiches onto a serving platter and serve.
