Introduction

A yummy one pot dish. It is easy and nutritious! Sprinkle a little low fat mozzarella cheese on top for added yum! Great for big families and easy to portion and freeze for future quick meals! Ingredients

    1 lb. lean ground beef
    1 bag frozen mixed vegetables
    1 can tomato soup
    1 can tomato sauce
    1 head of cabbage
    1 can diced tomatoes, ie: del monte diced tomatoes with pepper and onion
    5 cups white or brown rice, cooked separate

Directions

In large pot brown and drain lean ground beef. Add frozen vegetables, tomato soup, sauce, and diced tomatoes (do not drain). Chop cabbage into 1 in. pieces and add to pot. Add about 1/2 a soup can of water to mixture. Mix and let simmer on medium heat, stirring frequently about 1/2 hour. Cook rice separately and add after 1st 1/2 hour of cooking. Mix rice with meat and veg. and simmer covered about 15 more minutes, or until cabbage looks to be fully cooked. Serve and top with low fat mozzarella cheese for added flavor.

You can add any spices or seasonings to the beef when browning for slightly different tastes.
