Boil up fresh black beans, and mix this batch up ahead of time and store in large quart size jars stored in the frig for the summer days to toss on salads, or throw into mexican plates, wrapes, or just eat as a snack or side dish on a hot summer day. Very refreshing and high energy with good taste along with a dallop of low fat sour cream and corn chips. Ingredients

    4 cups raw black beans, boiled ahead and cooled
    3 cups frozen, thawed sweet corn kernels
    1 cup sweet red bell pepper, chopped
    1/4-1/2 cup celantro, chopped and depending on taste

    This recipe is ment to be refreshing, simple, colorful, and tasty.

    Beans: cook approx: 45min; chill prior to preparing.
    The jars of salad will stay in frig. unspoiled for approx: 3 or 4 weeks. Use prepaired canning jars for longer use. It is so good that you will eat it up very quickly!

Directions

Boil black beans only for approxamately 45-55 min. and chill before assembling.
