Number of Servings: 4

Ingredients

    1-1 1/2 lb pork loin roast
    2 Tbs Canola Oil
    2 Tbs Red Wine Vinegar
    2 tsp Minced Garlic
    1 Spanish Onion Sliced
    1 Green Bell Pepper Sliced
    1 cup Bloody Mary Mix (or tomato Juice)
    1 tsp Dijon Mustard
    1 Tbs Sriracha (or hot sauce)
    1/2 cup water

Directions

Place the Pork Loin in a Plastic Zip-Top Bag. Mix Garlic, Oil, and Vinegar, and pour over meat. Close bag and refrigerate 8 hours or overnight. Remove Roast from Bag and discard marinade. Place roast in Crock Pot and top with remaining ingredients. Cook on high for 5-6 hours.

Serving Size: two slices per serving (depending on thickness)
