Ingredients
-
1/2 cup white whole wheat flour
1/4 cup almond meal (flour)
1/2 cup unsweetened cocoa powder
1 cup xylitol crystals (or Splenda, but not as yummy)
1 tsp. baking powder
1/2 tsp. salt
1 large egg
3/4 cup unsweetened applesauce
1/3 cup buttermilk
1 tsp. vanilla
1/2 cup chopped walnuts (optional)
Directions
Mix all ingredients in a bowl until just combined. Pour into prepared 8x8" pan. Bake at 350 degrees for 30-35 minutes until toothpick inserted into center comes out with just a little bit of batter on it. Best when underbaked just a little. Brownies will continue to cook slightly after being removed from oven. Cool completely. Cut into 12 squares.
*Notes:
1. You could also use regular whole wheat flour or whole wheat pastry flour in this recipe.
2. You could probably use regular non-fat milk in place of the buttermilk. I didn't have any at the time, so I used buttermilk.
3. You could probably reduce the xylitol crystals to 3/4 cup, but I have a sweet tooth, so I used 1 cup.
Serving Size: Makes 12 servings.
