Introduction

I created these pancakes when my husband and I were put on a Candida Diet. I only listed wheat flour but actually make them with a mixture of whole wheat, rye and brown rice flours. You can experiment with the flours you like to use and the oil you like to use as well. You can also add more flavor by increasing the cinnamon or adding vanilla. Make them your own! Ingredients

    3/4 c. cooked oatmeal
    1 1/2 c. water
    2 eggs
    2 Tbsp light tasting olive oil (or oil of your choice)
    2 cups whole wheat flour (or mixture of flours of your choice)
    1 tsp baking powder

Directions

Cool oatmeal according to directions (or better yet, use leftovers from yesterday's breakfast). Beat eggs; add water. Add all other ingredients. Mix until moistened. Fry on griddle that was wiped with a little butter or oil

Serving Size: makes 3 cups of batter which I made into 8 pancakes
