Introduction
Homemade Japchae (Rice Noodles with Stir Fry vegetables and protein) Homemade Japchae (Rice Noodles with Stir Fry vegetables and protein)Number of Servings: 8
Ingredients

3 cups Rice Noodles (6 oz dried)
1 cup ea Cauliflower, Broccoli, Carrots
0.5 cup bell pepper (more color the better) cubed
1/2 medium onion (I use vidalia or sweet yellow)
3 large eggs
1 cup shitake mushrooms
Flank stank cut into strips.
Directions
Prep :
Soak Noodles in Cold water for 20 minutes
Soak Mushrooms in Cold water for 30 minutes
Cut steak across grain into 2-3" strips 1/4-1/2" wide
cube/dice vegetables
Cooking :
Heat Sesame Oil over medium-high heat.
Cook onions until slightly translucent
Add vegetables to onions and cook until slightly soft (Still crunchy)
Remove vegetables and put in another container.
Scramble Egg and add to top of vegetables.
Cook steak for 1 minute on both sides and then transfer to cutting board.
Cube steak and add back to pan
Add vegetables and eggs back to pan
Add shitake mushrooms and mix everything together
Cut noodles into 4 sections and add to pan
Heat and Mix until heated thoroughly.
Serve warm.
