Introduction

This can be used for tortillas and also makes a nice flat bread. This can be used for tortillas and also makes a nice flat bread.
Number of Servings: 1

Ingredients

    1/4 cup teff flour
    1/4 cup potato starch
    1/4 cup rice flour
    1/2 tsp salt
    1/2 tsp sugar
    1 tsp oil
    1 tsp xanthan gum
    1/2 cup water

Directions

Mix all ingredients.
Roll into 3 small balls and then roll flat with rolling pin.
Cook in hot skillet with a little bit of oil in the pan. Cook until desired brownness. Flip and cook other side.

Cooking tip - Spray sheet of tinfoil or plastic wrap with cooking spray. Roll tortilla on that and then use that to transfer tortilla to skillet.

Serving Size: Makes 3 medium size tortillas

    O.K.
    it must be very dry where you live, because I had to add 1/4 cup of corn flour to make a dough work. I also don't usually add that much xanthan gum, so halved it ... good thing! it was sticky as anything. once it was the consistency I needed, I used the tortilla press & made 8 little tortillas.
