Introduction

A simple stir-fry with pork & tomatoes, plus curry paste & sauteed garlic & shallots. Based on Nancie McDermott's recipe from Quick & Easy Thai, with minor alterations. Ingredients

    2 Tbsp oil
    2 Tbsp garlic
    3 Tbsp shallots
    1 Tbsp red curry paste
    1/2 lb ground pork (extra-lean preferred)
    3 medium tomatoes
    3 Tbsp fish sauce
    1 Tbsp brown sugar, packed
    1/2 c water

Directions

Heat oil in wok. Add garlic & shallots, saute a minute or so, then add red curry paste and saute another minute. Mix in pork, then add remaining ingredients.
Boil on low for 7 minutes.
I like to serve on rice with cucumbers.
