A nutritious breakfast in one!Light and fluffy citrus muffins that cleanse.
Fruit, dairy, nuts, whole wheat, oats and healthy oils.
You may substitute sugar for honey. Yoghurt flavour can be of any choice. Fruit yoghurt with visible fruit chunks is always best. A nutritious breakfast in one!

Ingredients

Wholemeal Flour - 2 cups
Brown Sugar - 4 teaspoons
Egg - 1 large
Olive oil - 1/4 of a cup
Orange Juice - 100 mL (fresh is always best)
Plain or Fruit Yogurt - 2/3 of a cup or 1 single serve
Breakfast Muesli - 1/4 of a cup
Directions
1. Oil or grease muffin tray.
2. Mix together flour, brown sugar, whole egg, oil, orange juice and yoghurt.
(Be careful not to over-mix the batter as this will take the fluffiness away.)
4. Divide batter into the muffin tray cases.
(My mixes tend to divide around ten but you can spread them out)
5. Sprinkle muesli over batter and then bake muffins at 180 degrees fan-forced.
(You may like to go with you regular muffin baking temperature, but 180 fan-forced seems most common these days and it works wonderfully with this recipe)
6. At 15 minutes, poke a muffin with a knife. If any dough comes off the knife, cook for a little longer. Then you're done!
