Introduction

Ingredients

    1/2 tsp olive oil
    3/8 onion, chopped
    3/4 garlic clove, minced
    1/4 cup plus 2 tsp uncooked white rice
    1/2 cup plus low fat vegetable broth
    1/2 tsp ground cumin
    1/8 tsp cayenne pepper
    1 can black beans, drained and rinsed

Directions

1. In a stockpot over medium-high heat, heat oil. Add onion and garlic. Saute for 4 minutes. Add rice and saute for 2 minutes.

2. Add vegetable broth, bring to a boil, cover and lower the heat. Cook for 20 minutes. Stir in spices and black beans.
