Introduction

Great for breakfast, brunch or snack. This low calorie muffin is as filling as it is pretty. Go ahead and have 2 if you want. Great for breakfast, brunch or snack. This low calorie muffin is as filling as it is pretty. Go ahead and have 2 if you want.
Number of Servings: 14

Ingredients

    1 C greek yogurt
    1 C whole grain quick oats
    1 egg
    1/4 C applesauce
    2/3 C flour
    1/3 C self-rising flour
    1 t baking soda
    2 t cinnamon
    1 T french vanilla coffee creamer
    1/4 t sea salt
    1 C frozen blueberries (or fresh)
    1/2 C light brown sugar

Directions

Mix wet ingredients +sugar and dry ingredients in separate bowls. Slowly add dry ingredients to wet.
Fold in blueberries (add pecans or walnuts if you like)
Bake at 400 degrees for 10 minutes or until golden brown.
Let stand to cool (*very important or the inside will be gooey).

Want a topping? Mix 3T oats, 2T brown sugar, 1t move over butter and spoon onto muffin (~1T each)... not calculated.
