Introduction

Lower fat, fun cupcake that is super easy to make! Lower fat, fun cupcake that is super easy to make!
Number of Servings: 24

Ingredients

    Cake Mix of your choice (will make 24 cupcakes)
    I can diet Hansens all natural soda of your choice
    3/4 Scoop of Chocolate Shakeology
    Cupcake Wrappers
    1-2 cans Chocolate icing (depending on how thick you like to ice...)
    12 Large Nilla Wafers
    12 mini Nilla Wafers
    1 tube black piping gel
    1 tube red piping gel
    You can buy all of these things in the baking isle of the grocery store.

Directions

Mix one Diet Hansens soda into a cake mix of your choice. Follow the mixing instructions but DO NOT add egg, oil, or water!

Follow baking instructions on box and remove 2 minutes off the MINIMUM bake time (i.e. if it says 17-22 minutes bake for 15)

Cool in fridge for 20 minutes. While cooking or cooling continue onto frosting and cookie prep.

Cookies: Use a serrated knife and "saw" the mini's in 1/2, set aside.

Frosting: Take 3/4 a can of frosting and stir in 3/4 scoop of chocolate Shakeology. Whip for one (1) minute at a low speed until frosting is well mixed and appears light and fluffy.

Frost cooled cupcakes, place cookies on the top as show in picture and add piping elements.

***For the most moist cake refrigerate covered for 24 hours***

    These are so adorable! If I were able to make baked goods for my son's class last year (and would have seen these), it would have been perfect. Lot of ifs, I know. Great healthy idea! - 9/26/11
