Ingredients

    4 large potatoes, sliced into 1/4 inch slices
    1 sweet vidalia onion, chopped
    2C shredded cheddar or mexican cheese
    3T butter
    3T flour
    1/2 tsp salt (or to taste)
    1/2 tsp pepper (or to taste)
    2 C 2% milk

    3/4 C bread crumbs (optional)

Directions

1. Preheat oven to 400 degrees F. Butter bottom and sides of 1 quart casserole dish.

2. In medium sized saucepan, melt butter over medium heat (be careful not to burn). Stir in flour to make a paste. Once flour is absorbed, slowly add milk, while constantly stirring and scraping the bottom. Cook until thickened. Mix in cheese, and stir until cheese has melted.

3. Layer 1/2 of the potatoes and onions in the bottom of the buttered dish. add half of cheese sauce. Add second layer, and add remaining cheese sauce.

4. Cover with foil, and bake 75 minutes. Remove foil, and bake last 15 minutes uncovered (if you prefer a softer top, you may leave the foil on the entire time). You may also add bread crumbs to the top when you remove the foil. (bread crumbs not calculated into nutritional count.)
