Ingredients

    I garlic clove, peeled
    1 shallot, peeled
    1 red pepper, seeded
    3 medium ripe tomatoes, quartered
    1 medium cucumber, peeled and quartered
    1 tsp salt
    1/4 tsp pepper
    2 Tablespoons olive oil
    3 Tablespoons sherry or balsamic vinegar
    1/2 cup ice water

Directions

Add all ingredients to a blender. Blend to desired texture. Chill.
