Introduction

This recipe is from Atkins for Life. The original recipe uses low carb tortillas but I cut them out and replaced them with egg whites. I also replaced scallions with green onions. Ingredients

    2 Poblano Chilies, roasted, seeded, peeled, and chopped
    1 (8 ounce) package cream cheese, softened
    1 T minced green onion
    2 t fresh lime juice

    2 T olive oil
    8 egg whites

Directions

1. Mix all filling ingredients in a bowl. Cover and chill until firm.
2. Add some olive oil in a nonstick skillet. Beat 2 egg whites and add a little garlic powder to them. Pour egg whites into hot pan and move pan around so that the eggs spread out evenly to form a "tortilla". Flip over once and set aside when done. Repeat until you have 4 "tortillas".
3. Spread 1/4 cup filling to edges. Roll up and cut each across into five 1-inch-thick pieces.

Serving Size: Makes 10 servings (2 pieces per serving)
