Introduction
My daughter is allergic to peanuts so I substituted the peanut butter in the original recipe with "School Safe Wow Tastes Just Like Peanut Butter Soy Nut Butter". Can't tell the difference! Ingredients

1 egg white
1/2 cup chunky style soy nut butter
1/3 cup packed brown sugar
1/4 cup honey
1/2 cup melted butter (not soft margarine - bars will be soggy!)
2 1/4 cups oats
1/3 cup mini chocolate chips
Directions
Preheat oven to 350 degrees.
Prepare the baking dish: Spray a 7x10.75 " baking dish with vegetable spray. Line it with parchment paper (leave some hanging over the edge to make removing the bars easier). Spray the parchment paper with more spray.
In a large bowl, whisk the egg white until it's foamy Add the soy nut butter, brown sugar and honey. Stir until smooth. Add melted butter and oats and stir until combined. Fold in chocolate chips.
Pour mixture into baking dish and bake for 15-20 minutes (until edges are brown and centre looks done). Remove from oven and let cool in the baking dish for 1 hour. Grab the edges of the parchment paper and lift out of the baking dish. Cut into 24 bars and enjoy!
