Introduction

Adapted from Back to Her Roots. Lacto-ovo Vegetarian, but not vegan as I made it.

I used tapioca pearls from the regular market and only soaked them for one half hour. The health food store variety may need an entire hour to soak. You want them soft when squished, but to hold their shape when you stir them.

Instead of ground spices you can tie whole, crushed spices into a cheesecloth bag and fish it out before putting into dishes

Number of Servings: 4

Ingredients

    1/4 C Tapioca Pearls
    1/2 C Water
    1 Cinnamon Stick
    1/4 t ground cloves
    1/4 t ground ginger
    1/2 t ground cardamom
    dash ground black pepper
    1/2 t pure vanilla extract
    1/4 t almond extract
    3/4 C Milk
    1/4 C Half and half

Directions

Soak Tapioca Pearls in water for about half an hour. Drain.

Pour milk and half and half into a medium saucepan. Stir in soggy tapioca pearls. Stir in spices and extracts. Bring to a boil over medium heat.

Simmer for 5-10 minutes, or until all the tapioca pearls are completely translucent. There shouldn't be any with white left in them.

Fish out the cinnamon stick. Ladle pudding into four 4oz ramekins. Cool, chill and enjoy!
