Ingredients

1 T vegetable oil (I use olive oil)
1 lg onion, chopped ( about 1 cup) ( I used red onion)
1 c sliced mushrooms (about 3 oz) (I used a small can, drained)
vegetable cooking spray (I used canola oil)
1 egg, beaten
1/4 c milk
3 1/2 c cooked tri-colored or plain corkscrew-shaped pasta (I used 3 c cooked brown rice pasta)
4 oz shredded par-skim mozzarella cheese (about 1 c)
1 1/2 c Prego Traditional or Tomato Basil & Garlic Italian Sauce (I used Rago Robusto 6 cheese)
Directions
1. Heat the oven to 300 deg.
2. Heat the oil in 12 inch skilled over medium heat. Add the onion and mushrooms and cook unitl they're tender and almost all of the liquid is evaporated. Remove the skillet from the heat. Spray a 12 inch pizza pan with cooking spray.
3. Mix the egg, milk, pasta and 1/2 cup of the cheese in a medium bowl. Spread the pasta mixture in an even layer on the prepared pan.
4. Bake for 20 min. Spread the italian sauce over the pasta crust. Top with the onion mixture. Sprinkle with canadian bacon and pinapple. Sprinkle with the remaining cheese. Bake for 18 minutes or until the cheese is melted and the sauce is hot and bubbling. Let stand for 5 minutes.
