Introduction
This is a healthy flavorful way to eat a hearty bowl of vegetables. Ingredients

Zuchini & Diced Tomatoes, 3 cup (remove)
Onions, raw, 1 cup, chopped (remove)
Cilantro, raw, 5 tbsp (remove)
1/2 tsp. Cumin Powder, 2 serving (remove)
Garam Masala, 1 tbsp (remove)
Salt, 2 tsp (remove)
chilli powder, 1 tsp (remove)
Crisco Pure Vegetable Oil, 1 tbsp (remove)
Directions
Cut Zuchini into 1/2 inch cubes.
Chop Onions and Tomates into a fine dice
Put oil in a non stick pan and heat on medium-high
Put Onions and Zuchini into hot oil stir until zuchini is brown and onions are soft and slightly brown.
Add tomatoes - stir for another few minutes
Sprinkle all spices over all vegetables cover the pot and turn heat to medium - low for 8 minutes
uncover and stir, vegetables are ready, you can continue to stir on heat until vegetables reach your desired consistency and desired liquid level. I dried most of the liquid and made sure the vegetables were soft but not mushy.
Add corriander (finely chopped) and stir it into the vegetables.
Serve with Chapati, Pita or rice. I added a side of cucumber yoghurt on the side.
This can also be used as a side dish with grilled chicken or fish.
