6 large eggs
2 tablespoons 1% fat cottage cheese
paprika
salt
pepper
1 green onion
Directions
Hard boil eggs but putting eggs in hot water, bring water to a boil and remove from heat. Cover eggs and let sit 12 mins. Run cold water over eggs until cool.
Peel eggs and cut in halves. Take yolks from three eggs and combine in bowl with cottage cheese.
Whisk with fork until smooth.
Add paprika, salt, pepper to taste. Garnish with chopped green onion.

Recipe calls for 6 eggs but you say take yolks from only 3. What do you do with the other 3 yolks or is there a misprint somewhere? - 8/31/11

I just threw out the other three yolks - by using only three it keeps the calories down, you still get the good yolky taste and there is plenty to stuff the 12 egg halves with.
