Ingredients

    1 lb lentils
    1/4 cup olive oli
    4 cups yellow onion
    4 cups chopped leeks
    1 tblsp garlic
    1 tblsp fresh thyme
    1 tsp cumin
    3 cups celery
    3 cups carrots
    3 qts chicken broth
    1/4 cup tomato paste

Directions

cover lentils for 15 minutes with boiling water and then drain.

med heat heat olive oil, onions, leeks, garlic, thyme and cumin for 20 minutes. Add celery and carrots and cookd for 10 more minutes. Add broth, tomato paste, drained lentils and cover and bring to boil. Reduce heat and simmer for an hour.
