Introduction

I made this up with stuff I had around when I was so hungry that I thought I was about to fall over. Not bad for panic induced cooking. I made this up with stuff I had around when I was so hungry that I thought I was about to fall over. Not bad for panic induced cooking.

Ingredients

    3 cups Chicken broth (reduced sodium)
    1 cup chicken breast cooked and shredded
    1 package house foods Tofu shirataki noodles
    1 cup grated carrot
    1 tsp fish sauce (if you are at all concerned about salt you may want to leave this out)
    1 clove garlic crushed
    1 to 2 tsp grated ginger
    fresh cilantro
    lime wedges

Directions

put the broth, chicken, ginger,garlic, and carrots in a pot and heat for a couple of minutes, all the tofu shirataki noodles. (the noodles will need to be drained and rinsed before being added to the soup.) add the fish sauce. let heat until simmering. take off heat, put into soup bowls and garnish with fresh cilantro and squeeze a lime wedge into soup. Yum.

Serving Size: makes a pot that could easily serve 2 but I ate it all!! :)
