Ingredients

1 tbsp canola oil
2 eggs, beaten
4 cups cooked brown rice (about 2 cups uncooked)
1 cup chicken breast, ham, pork, or beef, cooked and chopped
2 green onions, sliced
Low sodium soy sauce or hot sauce to taste
Directions
1. Heat large skillet on medium high. Add 1 tsp of cooking oil. Add eggs and scramble.
2. Remove eggs and set aside.
3. Add the rest of the oil (2 tsp) to pan. Stir fry rice, breaking up lumps by pressing rice against pan.
4. Add meat and vegetables. Stir-fry until heated.
5. Add green onions, eggs and sauce to taste.
6. Serve hot. Cover and refrigerate leftovers within 2 hours.
