Ingredients

1 Lg sweet potato, peeled and grated
1 Lg Zucchini, grated
2 Lg Carrots, peeled and grated
1 Sleeve WW saltine crackers - crushed into crumbs
1 cup cooked brown rice
3 egg whites
Juice of one lemon
1/2 cup ground almonds
1/2 cup ground sunflower seeds
1 tsp unrefined sea salt
pinch of black pepper
1 tsp dried basil
Directions
1. Preheat oven to 375. Line a large baking sheet with parchment paper
2. Combine all ingredients in a very arge mixing bowl. With clean bare hands mix everything together very well. You should be able to shape the mixture into balls and then press them into a burger shape on a cookie sheet. If your mixture is too dry, add more egg whites. If it is too wet, add more cracker crumbs.
3. Place completed patties on the baking sheet. You may need more than one sheet. When you sheet is full, place it in the over and bake for about 15 minutes. Then flip and bake 5 more minutes. Patties should be golden brown on top.
4. Great on it's own or on a bun with condiments of your choice.
