Ingredients

    1 (15-ounce) can black beans, drained and rinsed
    1 cup frozen whole-kernel corn, thawed, or fresh corn kernels (1 ear)
    1/4 cup packed fresh cilantro, chopped
    2 med-large Roma tomatoes, seeded and diced
    1/4 cup red onion, diced small
    3 tablespoons fresh lime juice
    2 tablespoons avocado oil or light olive oil
    1 teaspoon ground cumin
    1/2 teaspoon salt
    2 avocados, diced
    * Optional 1 Teaspoon of minced Serrano Chili Pepper

Directions

Combine first 5 ingredients. In a separate bowl, mix lime juice, EVOO, cumin and salt until well blended. Pour over other ingredients. Dice and fold in avocados just before serving.

Serving Size: Makes approx. 5 1-cup servings
