Ingredients

    1C lentils 1C whole wheat flour
    1C butter 1tsp baking soda
    1C brown Sugar 1tsp Vanilla
    1 egg 1C quick rolled oats
    1C slivered almonds 1C pumpkin Seeds
    1C chocolate chips


Directions

Preheat ovento 375F

Cook the lentils in boiing water for 25-30min (until soft). Strain and crush 1 cup of the lentils with a fork. Greasea cookie sheet or line with parchment paper. In a bowl, cream the crushed lentils, butter and brown sugar. Add the egg and blend. Add the flour, baking soda and vanilla. Stir in the oats, seeds, almmonds and chips and mix well. drop the cookies by the spoonful onto the cookie sheet and flatten. Bake for 13-18min and allow to cool on rack.
