Ingredients

    1 lb. extra lean ground beef
    1 sweet onion, diced
    1 cup carrots, chopped
    1 bag frozen broccoli & cauliflower
    1 cup skim milk
    1/3 cup Italian bread crumbs
    1 tablespoon garlic salt
    1 teaspoon onion powder
    1 teaspoon italian seasoning
    dash of salt & pepper
    1/2 cup freshly grated parmesan cheese

Directions

1) Preheat the oven to 350 degrees. Lightly grease a 9X13 inch baking dish.



2) Heat a skillet over medium high heat. Cook & stir ground beef until browned, adding the onions at the last few minutes of cooking. Drain the fat, then stir in the carrots, broccoli & cauliflower (i let my frozen veggies thaw first).



3) Mix the milk, egg, bread crumbs & seasonings into a bowl. Add the potatoes. Pour the beef/veggie mixture in the bowl. Mix together. Pour into the prepared baking dish. Cover w/ foil.



4) Bake in the preheated oven for 45 minutes. Uncover & sprinkle with Parmesan cheese & return to the oven. Continue baking (no foil) for 14 minutes.

    Incredible!
    This is a good "healthier" casserole. A couple things, the egg is not in the list of ingredients and the potatoes aren't either. I made it with carrots, celery and pepper instead of broccoli and cauliflower. I tweaked the spices for what I had on hand. I used 1 tsp of garlic, not 1 tblsp. - 1/15/20
