Ingredients

Tofu, firm or extra firm, 12 or 16 oz
Curry powder, 1 tsp
Lemon juice, 1 tbsp
Distilled White Vinegar, 1 tbsp
Splenda, 2 tbsp
Peppers, sweet, red, fresh, 1 medium
Garlic, 1 clove Chopped
Scallions, raw, 1 large Chopped
Yogurt, plain, skim milk, 2 tbsp
Dates, 1 cup, pitted, chopped
Celery, raw, 2 cup, diced
Directions
1. Preheat an oven to 350 degrees F (175 degrees C). Place tofu on a lightly greased baking sheet.
2. Bake tofu in the preheated oven for 25 minutes, stirring halfway through the cooking time. Remove tofu from the oven and allow to cool.
3. Mix curry powder, lemon juice, yogurt, vinegar, Splenda and red pepper flakes in a small bowl. Set aside. Combine tofu, red pepper, celery, dates, garlic, and green onion in a large bowl. Top with sauce and mix thoroughly. Chill for an hour before serving.
