Ingredients

2/3 cup onion, diced
1/8 tsp ground ginger
2 Tbsp minced garlic
2 large carrots, diced
2 medium yukon potatoes, peeled and diced
1 small zucchini, sliced 1" thick
1 can (15 oz) garbanzo beans, rinsed + drained
1 lb boneless, skinless chicken breasts
1/2 tsp cumin
1/2 tsp turmeric
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cinnamon
1/4 tsp cayenne pepper
1 can (14 1/2 oz) diced tomatoes
2 tsp dried parsley
1 Tbsp cilantro, chopped
Directions
Combine first eight ingredients in slow cooker. Combine spices in small bowl and sprinkle over ingredients in slow cooker. Add chopped tomatoes.
Cover and cook on LOW 8 to 10 hours or on HIGH 4 to 5 hours. Stir in parsley and cilantro before serving.
