A fresh mix of veggies, shrimp, & imitation crab with a citrus zing. Served as an appetizer with tortillas chips or tostada shells or as a light lunch. Ingredients

    10 large shrimp, cooked, shelled & deveined
    1 C chopped imitation crab meat
    1.5 Large red ripe tomatoes, chopped
    1 small onion, chopped
    2 T cilantro, chopped
    1-2 lemons, juice of

    **** optional Cholula sauce

Directions

If your shrimp is uncooked, place in boiling water until pink & cooked through, approximately 3 to 4 min. Remove tails from cooked shrimp & coarsely chop meat. In a large glass bowl, combine all ingredients & mix until well combined. You may add salt &/or Cholula or Tapatio sauce to taste, but may opt out due to added sodium. Cover bowl & place in refrigerator to marinate. You may eat right away, but I prefer to leave for at least a few hours for best taste. Can marinate over night. Best served chilled. Yum!
