Introduction

Number of Servings: 7

Ingredients

    1 15-oz can 100% pumpkin (not pie mix)
    2 tsp chicken stock or vegetarian chicken stock
    3 cups water
    1 cup skim milk
    1/2 tsp nutmeg
    1/2 or 1 tsp cinnamon (I used 1 tsp)
    1/2 or 1 tsp salt (I used 1 tsp)
    1 tsp sugar (optional)
    1 tbsp white flour (optional; for thickening)
    1 head (approx. 4 cups) cauliflower, finely chopped (optional)

Directions

Chop cauliflower very small.
Steam until soft.
Mix together all other ingredients in a large soup kettle.
Add cauliflower to soup.
Heat until bubbly.
The longer you leave it sit before serving, the thicker and better it will be!

    I'm guessing the 2 tsp = boullion? I'm going to try using curry powder. I think that will do the trick. - 4/18/12

    I agree with the responders who said it was bland. Something was missing, but I can't put my finger on what it was. There was a slightly bitter taste from the cauliflower. - 2/28/08

    We tried, but just didn't like it at all. The cinammon/cauliflower combo was just not tasty.
    And why does it call for 2 teaspoons of broth for a whole pot of soup?

    Good
    We added a little heat and it helped, I would recommend a dash of Tabasco. Was a nice new way to get some different veggies into my diet. - 4/19/07
