This is a super easy recipe to spice up breakfast. It looks great and tastes even better! Great for a family breakfast, or to serve to guests. Cut into smaller pieces for a brunch. Ingredients

    Pillsburry refrigerated Pizza crust (thin)
    8 pieces of turkey sausage links
    6 large eggs
    3 large mushrooms
    .50 cup of cooked spinach
    2 green onions
    5 strips of red bell pepper (chopped)
    .50 cup of 2% shredded cheddar or blended cheese
    salt and pepper to taste. (I didnt use any and it was still good)

Directions

Preheat oven to 375 degrees.

On a cookie sheet, spray non stick spray. Unroll the crust and place it on the sheet. Spread it out evenly or you can leave a bit of a ridge at the edges for the crust. Place in oven for about 8 minutes or until about halfway baked or slightly puffy and golden.

In a small nonstick pan, cook the sausage according to directions and then chop it up as it finishes cooking.
In bowl, chop the vegetables, add 6 eggs and whisk together until mixed well. Add to the cooked sausage, stirring and mixing well. When the egg mixture is almost set (still a little wet), pour onto the crust, sprinkle the cheese on top and pop it back in oven about 8-10 minutes until the cheese is melted and the eggs are set.

Makes 6 serviings of 200 calories, 17 grams of protein and 11 grams of fat. This recipe is very easy to modify to your tastes. Less sausage- less fat. No meat? Even better. More veggies, great!
