Number of Servings: 3

Ingredients

    14 oz coho salmon
    salt/pepper
    3 Tb water
    2 Tb dijon mustard
    2 Tb maple syrup
    2 tsp yellow mustard seeds
    1 clove garlic, minced
    olive oil for pan

Directions

Salt and pepper the salmon filet. Heat a 12" saute pan over medium high heat with a small amount of olive oil. Place salmon filet in pan and cook about 3-4 minutes until cooked half way through. Flip the filet and cook 2-3 more minutes until filet it cooked fully (do not overcook!). Remove and rest on a plate. Mix together the water, mustard, maple syrup, mustard seeds, and garlic. Add the mixture to the pan and cook over low heat, scraping up the bits in the pan left from cooking the salmon. Serve the salmon with the sauce spooned over.
