Introduction

A new take on the classic combination of salmon and asparagus. Low carb and very tasty. A new take on the classic combination of salmon and asparagus. Low carb and very tasty.
Number of Servings: 6

Ingredients

    8 Cups water
    8 oz chicken broth
    3 Salmon filets (about 12 oz)
    3 cups asparagus
    16oz 2% milkfat Cottage Cheese
    dried dill to taste
    salt and pepper to taste
    2 cups grated (not powdered) Parmesan cheese

Directions

1) heat water and chicken broth in large pot
2) remove salmon from skin, cut in chunks and add to liquids
3) steam asparagus, cut stalks in 1inch pieces and add to liquids
4) add seasonings to taste
5) when salmon is pale pink, add cottage cheese
6) stir, then let cool
7) pour into blender
8) return to pot and simmer
9) ladle into bowls, add 1/4 cup grated parmesan to each
