Ingredients

    Rosemary, fresh, 3-4 sprigs
    Salmon fillet
    Olive oil, 1tbsp
    Garlic, fresh, crushed, 1 clove
    Lemon, cut in half

Directions

Set oven rack on top level and preheat broiler.

In the middle of a 18 inch long piece of aluminum foil, set the rosemary sprigs as a bed for the salmon. Set the salmon on the rosemary, skin side down. Sprinkle the surface with garlic and spread with olive oil.

Then, fold the foil over it, and roll the edges of the foil together to seal the packet. Place the packet on a cookie sheet, and put the cookie sheet under the broiler for 20 minutes, checking at 15 minutes for doneness.

Garnish with lemon half.

    Needed a quick salmon steak recipe and yours came out great! I did have to increase the cooking time, but only cause it was a 18oz salmon steak! - 3/9/11
