Introduction

This is healthy and hearty and good. You can add Sriracha or Hot Sauce to kick it up too. Took me no time with frozen veg and chicken. My kids ate huge portions of this. Ingredients

    3 Cups Chicken Stock
    1 Chicken breast, cut into chunks
    Half a bag of egg noodles, whole wheat
    1 large carrot cut into small chunks
    1 onion, diced
    5 cloves of garlic, finely diced
    1.5 Cups of green beans
    1 Cup corn
    1 thumb of ginger root, grated
    1 thumb of lemongrass (I used the tube version)
    Lime juice from one lime
    3 Tb olive oil

Directions

Saute the onion and carrot in the oil. Once soft, add the garlic for a minute (don't let it burn). Add stock and bring to boil. Add green beans and corn. Return to boil. Grate in the ginger and lemongrass. Add the noodles. If your chicken is frozen, add it now. Cook for as long as the noodles indicate al dente. Add the lime juice, salt and pepper. You can also add more lime and hot sauce to the bowls. This tastes really good with Sriracha. The kids loved this.
