Number of Servings: 37

Ingredients

    1.5 cups chopped walnut pieces
    22 medjool dates, pitted
    .5 cup dried apricots
    4 tbsp. cocoa powder
    1.5 cup almond meal

Directions

In food processor, chop walnut pieces until fine. Add dates and apricots and process with walnuts. May have to stop and rearrange mixture. Add cocoa powder and and process until well mixed. Mixture will be sticky.

Scoop out of food processor and put in glass bowl. Put almond meal in separate bowl. Make 1.5" balls by rolling a bit of mixture in your hands. (Grease hands before) Then roll ball in almond meal to coat. Store in the refrigerator.

Serving Size: make about 37-38 1.5 inch balls

    Im wondering how you can have your calorie count so low with so much almond flour and walnuts? must be such large servings sizes. Will have to try this one out. :) - 8/17/12
