    3-4 TBSP natural peanut butter
    3-4 TBSP water
    1-2 tsp chili oil
    1 large green onion, chopped
    3 garlic cloves, minced
    frozen or fresh cut up zucchini
    1 chicken breast
    1 package udon noodles (the kind I use is pre-packaged)


Cook udin noodles.

Combine peanut butter and water and chili oil to make a paste. Cook chicken in a skillet seasoned with salt and pepper. Remove chicken from pan when done and cut into bite size pieces. Add garlic and onions to skillet cook, add chicken back in. Pour in peanut butter mixture and zucchini. Cook until everything is done. Add in cooked noodles and coat well. Serve immediately.
