Ingredients

    3.5 cups pumpkin puree (recipe included)
    3 Tbsp Garam Masala spice
    1 onion finely chopped
    4 cups low sodium chicken broth
    1 Tbsp Brown Sugar
    1 Tsp salt (or to taste)
    1 Tbsp Smart balance
    1 pinch Cayenne Pepper
    1 cup Skim milk
    Salt and pepper to taste
    1 Tbsp Creme Fraiche or sour cream (not included in calories)

    Pumpkin Puree:
    1 roasted pumpkin suitable for eating (check your local farmers market for different varieties) or Butternut squash

Directions

Pumpkin Puree: Clean and cut up pumpkin. Lay on baking sheet and bake in the oven until soft (about an hour). Let cool. Scoop pumpkin out of skin and puree in food processor until smooth. Set aside to use for pies and soups.

Soup: Saute onion with smart balance until soft. Add broth, pumpkin, sugar, salt and spices. Stirring constantly on medium high, bring to a simmer. Turn down the heat. Slowly add milk stir in. Serve with a dollop of creme fraiche, sour cream or Greek yogurt.
