Introduction

These are great topped with a tbsp maple syrup. These pancakes will be more dense than a typical pancake but still very yummy and very healthy! These are great topped with a tbsp maple syrup. These pancakes will be more dense than a typical pancake but still very yummy and very healthy!

Ingredients

    1.75 cups uncooked oatmeal
    15 egg whites
    1 tsp baking powder
    1.25 tbsp pumpkin pie spice
    2 tbsp real maple syrup
    1.75 canned pumpkin

Directions

In a food processor combine oatmeal, egg whites, baking powder, pumpkin pie spice, and maple syrup. Pulse for about 20 seconds. Add in pumpkin and pulse until combined.
Pour 1/4 cup amounts of batter onto 300 degree skillet for about 3 min on each side or until slightly browned.
you can freeze these and reheat in the microwave or toaster.

Serving Size: Makes 14 - 4 inch pancakes
