Introduction

Basic, vegetarian Spanish rice. Great alone with a salad or as a side with chicken. I like to use basmati rice, but any kind of rice can be used. Ingredients

    3 cups water, boiled
    2 cups white Rice, long grain, 2 cup
    2 cups chopped green peppers
    1 cup chopped onion
    1 cup shredded cheddar cheese
    2 cups diced tomatoes (fresh or canned)
    2 t ground black pepper, or to taste
    2 t salad seasoning, like Salad Supreme, or to taste

Directions

1. Preheat oven to 350 degrees.
2. Boil 3 CUPS OF WATER
3. Pour into large casserole and add 2 CUPS RICE, 2 CUPS CHOPPED GREEN PEPPERS, 1 CUP CHOPPED ONION, 2 CUPS DICED TOMATOES, and 1 CUP SHREDDED CHEESE. Mix well.
4. Add PEPPER and SALAD SUPREME to taste. Mix well.
5. Cover casserole and bake in 350 degree oven for 1 hour.
6. Serve.
