Ingredients

One whole purple cabbage, finely shredded with knife.
Either one large, or two smaller raw beets, peeled.
One half of a medium to large red onion.
Fresh ginger, grated with a micro plane.
Olive oil, Tamari, and Seasoned rice vinegar (roasted garlic)

Directions

First I hand shred a whole purple cabbage and place in a LARGE mixing bowl. Next I use my grater attachment on my food processor to shred up the raw beets then add them to the bowl with the cabbage. Before I add the red onion I slice it very finely and allow it to soak in a bowl of water while I mix together the dressing. (This makes the onion have a mild flavor). I mix together the tamari, the vinegar, and olive oil then use my micro plane grater to grate up the ginger and lemon zest. Drain onions and add to cabbage bowl along with the dressing. Use hands to slowly incorporate all of the ingredients. After it is mixed well and everything is a lovely purple I usually transfer to a gallon size ziplock to marinate before serving. I flip the bag over every now and then to make sure everything absorbs the flavors form the dressing. This will taste even better the next day!
