Ingredients

* *Baked Potato, with skin, 1 medium (2-1/4" to 3-1/4" dia.)
* Green Beans (snap), 2 cup
* Canned Tomatoes, 1.5 can
* Carrots, raw, 3 carrot (7-1/2")
* Zucchini, 1 cup, sliced
* Onions, raw, 1.5 cup, chopped
* Vegetable Broth, 4 cup
* Paprika, 3 tbsp
* Whole Wheat Spaghetti, cooked (pasta), 2 cup
* Tofu, extra firm, .5 block
* *Soy Sauce, .15 cup
* Red Wine, 2 fl oz
* Garlic, 2 cloves
* Olive Oil, 3 tbsp
Directions
Chop all vegetables into large pieces. Saute onion and garlic in half of olive oil till soft. Add all other ingredients except tofu, soy sauce, and pasta, and cook for 1/2 hour.
Cook pasta separately and add to the soup once cooked.
In a separate skillet, fry tofu chunks (or use seitan for more flavor) in the rest of the olive oil and the soy sauce. When well browned, add to pot and stir gently.
