Ingredients

    2 large eggs
    2 tbsp non fat milk
    1 cup diced boiled potato
    1 tsp olive oil
    1 tsp sweet basil
    1 tsp fresh thyme
    1/2 tsp fresh ground black pepper

Directions

Heat olive oil over medium heat and add potatoes. Whisk eggs, milk and spices add to potatoes and stir till eggs are done.
