Ingredients

    Dry Ingredients
    Whole Wheat Flour (King Arthur), 1 cup
    Unbleached All-Purpose Flour (King Arthur), 1 cup
    Oat Bran, 1/2 cup
    Ground Flaxseed,3 Tbs
    Wheat bran toasted, 3 tbs
    Cinnamon, ground, (Ceylon) 1 tsp
    Baking Soda, 3 tsp
    Kosher salt, 1 tsp

    Wet Ingredients
    Extra Large Eggs, 3
    Organic no-sugar added Apple Sauce, 1 cup
    Vanilla Extract (Madagascar), 1 tsp
    Fat Free Greek Yogurt, Plain, 1 cup
    Banana, mashed , 1 cup
    Brown Sugar, 1 cup, packed

    Mix In Ingredients
    Carrots shredded, raw, 2 large (approx. 1 cup)
    Lg Tart Apple shredded (approx. 1 cup)
    Dried Pineapple diced, 1 cup
    Coconut flake, unsweetened, 1 cup
    Raisins, 1 cup, packed
    Pecans, 1 cup, chopped
    Rolled Oats, 1 cup
    Chopped Dates, 1 cup

Directions

Mix dry (minus mix in items) ingredients in a bowl, then mix wet ingredients, then mix wet ingredients into dry. Mix to combine, then fold in mix in items.

fill muffin cups almost full (they won't rise much), then bake until they spring back when touched.

Serving Size: Makes 24 small muffins
