Introduction

I was looking for an alternative to traditional Ranch dressing. We're all happy with this one. Pine nuts are $40 a pound here, so I just used cashews in place. Also used olive oil instead of the sesame oil. I didn't have fresh fennel one time and ground fennel seed. We actually liked it better that way as more of the fennel flavor popped.

Ingredients

    ½ lemon, peeled and cut in half
    1 ¼ cups soaked cashews, (soaked 2 hours, drained and rinsed)
    ½ cup soaked pine nuts (soaked 2 hours and drained)
    ¼ cup cold-pressed sesame oil
    1 T agave
    ¼ cup chopped fresh fennel bulb
    ½ t poultry seasoning
    ½ t chopped fresh dill
    ¾ c apple cider vinegar
    3 medium cloves garlic
    1 t ground celery seed
    1 cup water
    ¼ c cold-pressed olive oil

Directions

Put the lemon first, then all the rest of the ingredients, in a blender. Blend well, served chilled. May be stored in the fridge for up to two weeks.
